Why

I wanted a place to put how I use my Bountiful Basket. This seemed like the best way to go. I know 3 blogs might just actually kill me but people look and want ways to eat healthier and cheaper. Bountiful Baskets has helped me implement healthier options into my families diet. We eat better and have a variety of new foods that we try. I have also been able to drop my grocery bill a ton by using bountiful baskets. I hope that this blog gives you ideas on how to use your basket each week.

So Sad no lettuce this week but that’s okay.  

What I froze this week

-1/2 strawberries (Libby ate the rest)
-Broccoli (so it doesn't stink up my fridge, I rarely use it fresh)


My meal plan for the week

I do all my prep work. 
I sliced up my strawberries, pineapple, honeydew melon, (if you pull these out at meal times they go very quickly.  I don’t have any strawberries left or pineapple.  The melon is almost ½ gone.

When Libby comes asking for a snack I always offer her fruits and veggies.  The last 2 weeks she has been only eating celery.  This week it will be apples.  This is a good way to teach your children good eating habit.  I would rather turn to something healthy than something like cookies.

This way I know my family is making wise snacking choices.

 Thai Peanut Chicken and Noodles

Apple crisp
Use:apples
 

1 cup butter
1 cup oats
1 cup brown sugar1 cup flour
Combine, and if you like crumble double!  It seems to be too wet, but that is the way it is supposed to be to get kind of crispy on the top.
Apples just add cinnamon to taste, two tbsp's of flour and some sugar.
Use about 9 apples...for a 9x13.  Make sure you use "cooking" apples aka spartan, or macs it works out the best with them.

Cabbage, Celery, Chayote squash, Green bell peppers, Romaine, Tomato, Cantaloupe, Apples, Oranges, Strawberry, Banana, Blueberry

We added tomato’s to salads and I just ate a few they tasted fantastic.
The cantaloupe didn’t make it 3 days before being devoured.
I hope to be able to make apple crisp.  But because the apples are a nice snack for all of us on the run they sometimes don't make it through the week.


I find that if I cut up all my produce and put it in see through containers my family will eat them because  it doesn't take any work to get a snack. 

Quick snacks list : Celery, Green bell peppers, Cantaloupe, Apples, Oranges, Strawberry, Banana, Blueberry.

Remember that if it is there, cut, ready to eat.  Your family will eat it.  But if they have to cut it or clean it, they won’t touch it.  Make the healthy food that you want your family to eat readily available and they will choose the good stuff over the bad stuff.

Breakfast Saturday morning

BLUEBERRY/STRAWBERRY
Blueberry pancakes
just add blueberries  to your pancake mix

With blueberry or strawberry syrup
Change fruit to make type of syrup

Strawberry Syrup:
2 pints whole fresh or frozen strawberries, hulled
2/3 cup sugar, plus more if needed
1/4 cup corn syrup
Pinch sea salt
1 tablespoon lemon juice

In a large saucepan over high heat, add the strawberries and sugar. (A large saucepan is needed just in case the strawberry syrup starts to boil up the sides.) If the strawberries are not as ripe or sweet as you like, add 1/3 cup more sugar. Add 2/3 cup water, the corn syrup and sea salt to the pan. Stir together until the sugar dissolves. Bring to a boil and cook for about 5 minutes, stirring occasionally.

Strain out the strawberries and continue to boil the liquid until the mixture has thickened to a syrupy consistency, another 8 to 10 minutes. Stir in the lemon juice and add the strawberries back to the saucepan. Gently stir to coat the strawberries in the syrup. (The syrup can be stored in an air-tight container in the refrigerator for up to 1 week, or cooled and frozen.)

Cook's Note: For an orange-lover's option, use fresh orange juice instead of the lemon juice to finish the syrup. Yield: 3 1/2 cups

Chayote
Chayote (pronounced chai-oh-tay) is a pear shaped tropical squash that is a common staple in Central America. The chayote has a mild flavor that allows it to blend into recipes well. The skin, root, stem, seeds and leaves of the chayote are all edible. The chayote will make a great addition to your diet as they are high in vitamin C, rich in amino acids and low in calories. Chayotes go by various names all over the world, but will likely be called chayote in grocery stores in the United States. If your primary grocer does not carry the chayote, check your local Asian or Latin markets, as they are stocked there.

    • 1
      Raw. The quickest and easiest way to prepare chayote is to eat it raw. The chayote makes a great addition to salads. Just chop the chayote to your desired shape and toss it in the salad. While removal of the skin and seeds may be preferred, it is not necessary.
    • 2
      Boiled. Remove skin and seeds, then cube the chayote. Boil the chayote in salted water with a 4 cloves of garlic. Once chayote is tender, drain and serve.
    • 3
      Baked. Cut chayote in half length wise and top with your favorite seasonings. Creole seasoning or Italian seasoning are both good choices. Bake for thirty to forty minutes in an oven set to 350 degrees.
    • 4
      Sauteed. Remove skin and seeds and cut into the shape of your choice. Saute in butter until tender and season with salt and pepper.
